Here's a simple recipe for Matcha Macarons:

Ingredients:

- 1 cup almond flour

- 1 3/4 cups powdered sugar

- 3 large egg whites, room temperature

- 1/4 cup granulated sugar

- 2 teaspoons matcha powder

- Pinch of salt

Instructions:

1. Sift together almond flour, powdered sugar, and matcha powder. Set aside.

2. In a clean, dry bowl, beat egg whites until foamy. Add a pinch of salt.

3. Gradually add granulated sugar while continuing to beat. Beat until stiff peaks form.

4. Gently fold the sifted almond flour mixture into the egg whites using a spatula. Be careful not to deflate the egg whites.

5. Line a baking sheet with parchment paper. Pipe small rounds of the batter onto the parchment paper.

6. Let the piped macarons sit at room temperature for about 30 minutes to an hour. This helps them form a skin.

7. Preheat your oven to 300°F (150°C). Bake the macarons for 12-15 minutes, or until they lift easily from the parchment paper.

8. Allow the macarons to cool completely before filling.

For Matcha Filling:

- 1/2 cup unsalted butter, softened

- 1 cup powdered sugar

- 1 teaspoon matcha powder

Instructions for Filling:

1. In a bowl, beat the softened butter until creamy.

2. Gradually add powdered sugar and matcha powder, beating until smooth.

3. Pair the cooled macarons and sandwich them with a dollop of the matcha filling.

4. Refrigerate the filled macarons for a few hours to allow the flavors to meld.
